Named after Val Telaggio in Lombardy. This washed rind, is surprisingly mild and fruity when young, with yeasty and sourdough-y becoming more pronounced as it ages. This is the perfect cheese to start learning about washed rind cheeses. Amazing to melt on pizza and grilled cheeses, but also try it with grilled peaches during the summer!
