For fans of Vacherin Mont D’Or, a cheese unavailable in the United States due to backwards pasteurization laws, we have something you’ll certainly enjoy as much. This gooey washed rind from Switzerland is wrapped in a spruce bark ring to hold it together and aged in its wooden box. Surprising notes of peanut butter followed by a woodsy feeling and a delicate rich sweet cream finish. Oh so complex! Just be sure to have some fresh bread or potatoes at the ready!
This cheese is made raw milk only between September and May. You’ll find it in our case only during the holiday season, so don’t miss out. Online, sold only as the whole wheel (about 1 lb each) but we do cut them in half at the shop. Although, we highly recommend a whole wheel, such that you can cut the top off for the true experience.
