Pecorino Verde Naturale is an Italian raw sheep’s milk cheese made in Sardinia and aged for 12 months. Organic and vegetarian, produced by a small farm where two brothers are making this cheese from A to Z. They even use their own thistle for their rennet that grows wild on their land! During the aging process they rub olive oil on the rind. Pecornio Verde Naturale is a beautiful, smooth cheese with grassy, slightly piquant flavor.
