This beautiful bloomy rind goat’s milk cheese is wrapped with spruce. (If you like Harbison from Jasper Hill… you might also love this one!) Rich and tangy with some mushroomy flavors, this special cheese is like walking in a forest on a nice spring day. Fresh, yet full of flavor, this cheese is very unique, becoming more intense and creamier as it ages. Perfect with a nice cool white wine or rosé.
Firefly farms is nearby! Located only a two-hour drive from our shop, in Accident, Maryland. The owners are wonderful people who make incredible cheeses. They use fresh goat (and cow milk) from family farms within a 30-mile radius of their creamery. They only use vegetarian rennet for all their cheeses and they also don’t waste their “leftover” whey, which is rich in protein! It is captured, refrigerated, and then picked up by local farmers and feed to livestock.
