This Pennsylvannian cheese is made with organic grass fed raw cow’s milk from Kerith Brook Farm, which is just up the road from the cheese making facility. Marigold is aged for 8 to 10 months, and is reminiscent of a cheddar, yet based on an alpine tomme style. It has a nice grassy flavor profile with some buttery and nutty notes. We love the sharp piquant finish, it just makes you want to take another bite!
