Made by Quesos Corcuera in Spain and named in remembrance of the family matriarch Julia Corcuera. Doña Julia is a pasteurized goat’s milk cheese that is made using vegetarian rennet in a “queso tierno”, which means that it is a cheese that has a short aging time (between 15-30 days).
This cheese is fresh and slightly springy to the touch. It is mild with some milky and creamy flavors and a touch salty. This cheese is delicious to snack on but has an incredible potential when melted… we’ll let you choose what you want to do with it!
